Homemade Hummus and Tahini Sauce

Homemade Hummus and Tahini Sauce

Hummus is Egyptian food dip made with chickpeas, blend with tahini, olive oil, lemon juice, garlic and salt. In Arabic its called “Hummus Bi Tahina” which means “Chickpeas with Tahini”. This is a very basic recipe of Hummus, you can try different variation by incorporating more garlic, avocado or spinach. It best served with pita bread.

For Tahini Sauce

Ingredients:

1 cup sesame seeds

3-4 tbsp light olive oil or canola oil

Pinch of salt

Procedure:

  1. Roast the sesame seeds on wide saucepan on medium-low flame for 3-5 minutes. It should be lightly colored not brown, its tents to burn quickly.

  2. Transfer to plate and cool completely.

  3. Add sesame seeds in a food processor and process until crumbly powder forms. Add olive oil and blend for 3-4 minutes.

  4. Make a smooth and pouring consistency paste, adjust oil if needed add salt and scrape of sides and bottom and blend it again for 1 minute.

  5. Store in airtight container and refrigerate for a month.

For Hummus

Ingredients:

1 can chickpeas or 1 ½ cup soaked and cooked chickpeas

2 tbsp lemon juice

¼ cup tahini

2 small garlic, minced

3 tbsp extra virgin olive oil

½ tsp cumin powder

salt to taste

2-3 tbsp water

Dash of paprika for garnish

Procedure:

  1. In a food processor, combine tahini and lemon juice and process for 1 minute. Scrape the sides and bottom and again blend for more 30 seconds.

  2. Add olive oil, minced garlic, cumin powder and salt, process for more 30 seconds, scrape the sides and bottom and again blend for sometime.

  3. Drain and rinse the chickpeas, add half of chickpeas to the processor and blend it for 1 minute. Scrape the sides and bottom every time to incorporated all ingredients.

  4. Add rest of the half chickpeas and blend for next 2-3 minutes. If it too thick to blend add water as per needed.

  5. Taste for salt and adjust if needed

  6. Serve Hummus with drizzle of olive oil and dash of paprika.
